    Application Guide: Four Steps to a Perfect Sear

    Works on all beef cuts, pork chops, lamb, game, and hearty roasted mushrooms.

    1. Pat dry

    Remove the steak from the refrigerator and pat every surface completely dry with paper towels. Surface moisture is steam — steam prevents browning.

    2. Season heavily

    Apply the Signature Steak Blend liberally over all surfaces. The low-sugar, coarse-texture formula is calibrated to handle a heavy coat without scorching. Don't hold back.

    3. Rest uncovered in the refrigerator — 45 minutes minimum, 2 hours ideal

    This is the step most home cooks skip. The Kosher Salt crystals dissolve as they draw surface moisture outward (osmosis), then that brine reabsorbs back into the meat carrying the spice flavors with it.

    The surface dries out again — forming the tacky, almost papery exterior that creates maximum Maillard reaction contact with the pan or grill. Skipping this step gives you a steamed exterior. Taking it gives you a crust.

    4. Sear over high, direct heat

    Cast iron, grill grates, or a screaming-hot stainless pan. The low-sugar blend handles high heat cleanly — no scorching, no bitter char. Rest the cooked steak 5–10 minutes before slicing to let the juices redistribute.

     

    For low-and-slow cooks (smoking or reverse sear): apply the same heavy coat and rest, then smoke at 225°F–250°F to internal temp, then sear hot at the finish. The Tellicherry pepper develops a distinct aromatic bark at low temps that is different from — and complementary to — a fast-sear crust.
