The Preparation

Prep the Meat

Place the prime rib roast on a large cutting board. Drizzle the olive oil over the top, followed by a generous layer of mayonnaise (or softened butter). Use your hands to rub the binder evenly across the entire surface of the meat. This will help the spices stick and create a caramelized crust.

Season Generously

Grab your bottle of West Coast BBQ Co. Signature Steak Blend and coat the entire roast heavily. Make sure to cover the top, sides, and bottom, gently patting the seasoning into the binder so it stays in place.

Prepare the Pan

Transfer the seasoned prime rib into an aluminum foil roasting pan. Lay the fresh rosemary sprigs directly on top of the roast to release aromatics during the cook.

Add the Beer

Crack open a can of lager. Pour a small splash (about ¼ cup) into the bottom of the foil pan to provide moisture and flavor for the drippings. (As demonstrated in the video, the chef's privilege is to drink the rest of the beer!)

Smoke

Preheat your smoker or pellet grill to 250°F. Place the aluminum pan with the prime rib directly onto the smoker grates.

Cook to Temp

Let the prime rib smoke undisturbed until the internal temperature reaches 125°F for rare or 130°F for medium-rare. Use a meat thermometer to check the thickest part of the roast.

Rest and Carve

Carefully remove the prime rib from the smoker. Tent it loosely with foil and let it rest on a cutting board for 20 to 30 minutes. This crucial step allows the juices to redistribute throughout the meat.

Serve

Slice the prime rib into thick, juicy portions and serve immediately!
